
Some operators may be reluctant to switch from raw to a fully cooked product if they believe it is more expensive.
However, if you start with raw sausage at $2 per pound and account for shrinkage and labor; the cost per pound after it has been cooked can easily be more than $2.50 per pound. After you take into consideration the cost of added spices, training, additional clean-up and slower throughput, it becomes clear that fully cooked products can translate into cost savings.
