Robert’s Pasta of Love
1 lb. whole-wheat penne pasta
¼ c. extra-virgin olive oil
¼ c. canola oil
½ red onion, sliced
½ green pepper, sliced
1 c. fresh portabella mushrooms, sliced
8 oz. Burke MagniFoods® Fully Cooked Chicken Breast Strips
w/Garlic Flavor, #30076
1 c. Roma tomatoes, diced
2-3 T. pesto sauce
Salt and fresh cracked pepper, to taste
Cook pasta in large pot of boiling water until tender but still firm to the bite, stirring occasionally. Drain and return the pasta to the pot.
While the pasta is cooking, heat the olive oil and canola oil in a heavy skillet over medium heat. Add onions, peppers and mushrooms, and sauté until tender. Add chicken strips, and stir gently until heated through. Add salt and pepper to taste.
Combine mushroom-chicken mixture with the pasta. Add Roma tomatoes and pesto sauce. Toss to mix.
